White Chicken Chili Recipe

Ingredients

  • Nonstick olive or canola oil cooking spray
  • 2 teaspoons olive oil
  • 1 onion, finely chopped
  • 3 cups leftover cooked chicken pieces, diced-precooked chicken
  • 1 tbls minced garlic
  • 1/2 teaspoon ground cumin (optional)
  • One 10-ounce package frozen white corn, thawed, or one 15-ounce can, drained
  • One 4-ounce can diced green or jalapeno chile peppers
  • Two 15-ounce cans white northern beans

Directions

Spray a saucepan, add the oil, and sauté the onions until tender. Add onions and remaining ingredients into pot and simmer for about 30 minutes.

Serve with low fat sour cream or salsa if desired.

Makes 6 servings.

One serving provides: 270 calories, 6 grams fat, 10 grams fiber, 25 grams protein
