Bruschetta Stuffed Chicken Recipe
Ingredients
- 1 can (14-1/2 oz.) diced tomatoes, undrained
- 1 pkg. (6 oz.) Stove Top Stuffing Mix for Chicken
- 1/4 cup water
- 2 cloves garlic, minced
- 6-8 boneless, skinless chicken breasts
- 2 tsp. dried basil leaves
- salt, pepper, dash of garlic powder
- 1/2 cup low fat shredded Skim Mozzarella Cheese
Preparation
- Preheat oven to 400°F. Place tomatoes in medium bowl. Add stuffing mix, water, garlic, and any other seasonings; stir just until stuffing mix is moistened and tomatoes are in smaller pieces. Set aside.
- Place chicken in plastic bag and pound chicken with meat tenderizer until chicken is 1/2-1/4 inch thick. Scoop stuffing mixture into center of chicken. Roll them and place in 13x9 inch pan with seam down.
- Bake 35 minutes, then add shredded cheese on top for last 5 minutes or until chicken is cooked through.
